- Put the black beans, cheese, cumin, spring onions, chilli, lime juice and salt and pepper in a large bowl and mix it all together.
- Once mixed, mash it all together with a fork and then spread the mix over 1 of the tortilla wraps evenly. Then place the 2nd tortilla on top.
- Heat a large frying pan on a medium heat and add the quesadilla.
- Cook for 3-4 mins on each side, occasionally pressing down on it with a spatula.
- Slide onto a plate and serve with the red onion and tomatoes.
