Chorizo Chicken & Spinach
- Heat the coconut oil in a pan and fry the chorizo for 1 minute before adding the red onion and frying until soft.
- Add the chicken breast and cook until it is almost cooked.
- Add the tomatoes and cook until they begin to collapse.
- Add the spinach until it wilts.
- Add the mozzarella on top to melt.
- Serve up and add the pine nuts on top.
